  • 4 ripe tomatoes
  • 2 zucchinis
  • 2 eggplants

Method
 

  1. Wash all the vegetables thoroughly and cut them into large chunks for easier processing.
  2. Place the vegetables (except tomatoes) into the Monsieur Cuisine bowl and chop for 10 seconds.
  3. Add olive oil to the bowl and set the sauté function at 120°C for 10 minutes.
  4. After sautéing, add the chopped tomatoes, salt, sugar, and oregano.
  5. Cook everything at 100°C for another 10 minutes until the vegetables are soft and well combined.
  6. Taste the pisto and adjust salt if needed.
  7. Serve hot as a main dish or side. It pairs perfectly with fried eggs or bread.

Notes

You can swap peppers with zucchini or eggplant depending on your taste.
Frozen vegetables can also be used to save time.
For a richer flavor, use high-quality extra virgin olive oil.
Add paprika or choricero pepper for a deeper Spanish taste.
