Instructions:
- Wash and cut all vegetables into small, even cubes.

- Heat olive oil in a large pan over medium heat. Add onion and garlic and sauté until translucent.

- Add red and green peppers and cook for about 5 minutes.

- Add tomatoes and zucchini and cook on low heat for about 20 minutes until tender.

- Season with salt and let rest a few minutes before serving so flavors settle.
