  • 500 g ripe tomatoes
  • 2 red bell peppers
  • 1 green bell pepper
  • 1 large onion
  • 2 garlic cloves
  • 1 zucchini
  • 4 tablespoons extra virgin olive oil
  • Salt to taste

Method
 

Instructions:
  1. Wash and cut all vegetables into small, even cubes.
  2. Heat olive oil in a large pan over medium heat. Add onion and garlic and sauté until translucent.
  3. Add red and green peppers and cook for about 5 minutes.
  4. Add tomatoes and zucchini and cook on low heat for about 20 minutes until tender.
  5. Season with salt and let rest a few minutes before serving so flavors settle.

Notes

Notes:
You can serve it with fried eggs, ham cubes, or Spanish omelet.
Zucchini can be replaced with eggplant or omitted.
It keeps well in the fridge for up to 3 days in an airtight container.
